Hi, I am a new bakery looking to make a tuna stuffed pie. The state health inspector is asking us to be HAACP for this product and I need help from a consultant how to achieve this. The inspector asked from us to be: Seafood HACCP requirements which requires training, a HACCP plan, monitoring, records, etc. in accordance with 21 CFR 123
